Raspberry White Chocolate Muffins
These White Chocolate Raspberry Muffins are a sweet & fluffy baked good that you can whip up quickly in any kitchen setting!
2 cups all purpose flour
2 ½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 cup non-dairy milk, unsweetened
1 teaspoon apple cider vinegar, or lemon juice
½ cup sugar
1/3 cup olive oil
1 teaspoon vanilla extract
2 Aloha Raspberry White Chocolate Protein Bars, chopped
1 cup raspberries, fresh or frozen
½ cup white chocolate chips
Preheat oven to 375° Fahrenheit and line a muffin tin with muffin liners.
In a large bowl, mix together the all purpose flour, baking powder, baking soda, and salt.
Add in the non-dairy milk, apple cider vinegar or lemon juice, sugar, olive oil, and vanilla extract. Mix until just combined.
Then, fold in the chopped Aloha Raspberry White Chocolate Protein Bars, raspberries, and white chocolate chips.
Fill each muffin cup with ¼ cup of batter, then bake for 20-25 minutes or until a toothpick inserted down the center of one muffin comes out clean.
Remove muffins from tin and transfer to a wire cooling rack to cool completely.
