People aren’t the only ones who should be allowed to dress up for Halloween. We let these apples in on the holiday tradition by dressing them up as pumpkins! Homemade costumes are always the best and with just a couple ingredients you have a perfectly healthy, and completely adorable, caramel apple pumpkin patch.
20 Medjool dates
1 cup plain yogurt of choice
Red and yellow organic food coloring—we used India Tree
1 small cucumber
Optional decoration: 1 cup shredded coconut and 1 packet ALOHA Daily Good Greens
Blend the yogurt, and dates in a food processor or Vitamix until you have a thick, seamless paste. Add the food coloring a little at a time until the mixture is orange. We used half a bottle of each color.
Coat your apples with the caramel paste and place on a plate. Refrigerate or freeze for five to ten minutes for best results.
In a medium bowl, add the shredded coconut, one tablespoon of water, and the ALOHA Daily Good Greens. Mix well and sprinkle on a plate.
Cut one-inch slices out of the cucumber for the “stems” and set aside.
Remove the apples from the freezer or refrigerator. Place them carefully on top of the coconut “grass.” Insert the stems in the top of the apples.
