Superfood Protein Turtles

Candy "turtles" are classically decadent and incredible delicious. What's better than soft, sweet caramel with a nutty crunch and chocolate coating? I'll tell you what - a protein packed, superfood version!

Makes about 15 turtles

Ingredients

15 pitted Medjool Dates

1/2 cup almond milk

1 tablespoon almond butter

1 tablespoon coconut oil

1 teaspoon vanilla extract

1/4 teaspoon salt

1 packet ALOHA Daily Good Chocolate

1 serving ALOHA Chocolate Protein

1/2 cup chopped pecans or nuts of choice

3 bars ALOHA Chocolate or 1 cup chocolate of choice

Preparation

  1. In a small saucepan, combine the milk and dates. Bring the milk to a soft boil and immediately take the pan off of the heat. Allow the dates to soak for 5-10 minutes.

  2. Place the warm milk and softened dates in a blender or food processor - add the almond butter, coconut oil, ALOHA Daily Good, ALOHA Chocolate Protein, salt, and vanilla as well. Process until completely smooth, stopping the machine to scrape down the sides as necessary. This took about 2 minutes in my food processor.

  3. Add the chocolate to the saucepan and heat on low until it is mostly melted - take it off the heat and allow the rest of the chocolate to slowly melt.

  4. Line a large plate or baking sheet with parchment paper. Take a heaping tablespoon of the caramel mixture and place it on the parchment paper - keep the shape round, but it doesn't have to be perfect. Repeat until you have used all of the caramel - there should be about 15 or so.

  5. Top the caramel rounds with the chopped nuts. Then use a spoon to dip them individually in the melted chocolate - return the chocolate covered turtles onto the parchment paper and place in your refrigerator to set.

  6. Enjoy! The turtles are best kept refrigerated and will last for a couple weeks, if well sealed.
