If you want to keep smashing avocados on bread and calling it a day, then I won't stop you. But what if you want more? What if you need an avocado toast that keeps you full for hours? That is not your average avocado toast? Then I have the recipe for you. By mixing creamy white beans with avocado, you increase the protein content by about eight grams while still keeping the classic avocado toast taste. I threw in some nutritional yeast for extra B vitamins and to thicken the spread up a bit, but it's not necessary.
This toast works for any meal: you can top it with a fried egg, extra veggies, or turn it into a sandwich!
1 small avocado 1/2 cup northern white beans 1 1/2 tablespoons lemon juice or apple cider vinegar 1/2 tablespoon nutritional yeast 1/4 teaspoon garlic 1/4 teaspoon salt 2 slices gluten-free bread Crushed red pepper flakes, to taste 1 teaspoon ALOHA Daily Good Greens Original
Smash avocado and white beans together using a fork or food processor (make sure not to over blend or your consistency will be too thin). Meanwhile, toast your bread. Add the remaining ingredients, stir well, and spread on toast. It's also good once it has been in the fridge for for a few hours, but the avocado might start to brown a bit.
