Gluten-Free Zucchini Bites

I love sneaking vegetables into, well, anything I can! These savory bites feel like a “carb-y” indulgence, but they are actually quite healthy! Whether you are entertaining or simply want a delicious bite - these are a perfect, healthy appetizer.

Yields about 16 zucchini bites

Ingredients

  • 1 1/2 cup finely diced raw zucchini - about 1 large zucchini
  • 1 1/4 cup Gluten Free Panko Crumbs
  • 1 garlic clove, finely diced
  • 3 tablespoon chives, finely chopped
  • 3 large eggs
  • 3/4 cup grated parmesean cheese OR 1/2 cup nutrional yeast and 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon ALOHA Original Superfood Greens

Preparation

  1. Preheat oven to 350F. Line a baking sheet with parchment paper, or simply grease with extra oil, and set aside. I find it helpful to spray the parchment paper with a little cooking oil.
  2. Wash the zucchini and remove the ends - finely diced them into small cubes.
  3. Place the diced zucchini into a mixing bowl and combine with the remaining ingredients - adjust salt and pepper to taste.
  4. You should have a moist batter that comes easily together. If the mixture is too dry and isn’t coming together, you ming need an extra egg (if this is the case, your eggs might not have been large enough) or an extra tablepoon or two of oil. If it is too sticky, add a little more crumbs, 1 tablespoon at a time, until you can easily shape balls with your hands.
  5. As you form the bites, place them onto your baking sheet. Bake for 20 minutes or until the outside is golden and crispy. Serve immediately plain or with the dip of your choice - we like to serve with this Avocado Hummus.
