Superfood Walnut Pesto Pasta

My father recently planted what initially seemed like ;a modest garden. It turns out that he has more than a green thumb, as there is now a green forest in my parent’s backyard. My mother can’t come up with enough ways to use all of their vegetables, particularly basil. I came over for dinner and found the most obvious solution: pesto! Given pesto is not particularly original, we decided to spice things up. Adding some extra superfood nutrients turned this common condiment into the healthiest and most delicious pesto I have ever had! Even the classics have room for improvement!

Serves Two to Three

  • 4 cups fresh basil leaves
  • 4 large garlic cloves
  • 1/4 teaspoon salt
  • 3/4 cup grated Parmesan
  • 1/2 cup walnuts
  • 1/2 cup olive oil
  • 1 pack ALOHA Daily Good Greens
  • 1/2 package (about 6 ounces) gluten-free pasta of choice
  • *For a vegan pesto, use 1/4 cup nutritional yeast and an additional tablespoon of olive oil

Superfood Greens

  1. Bring two to three quarts of water to a boil, add salt to taste. Add pasta to boiling water. Stir lightly for up to 10 minutes, or until tender. Drain well.
  2. For pesto, place all ingredients in a food processor—blend until you have a smooth paste. (This pesto will last two weeks if sealed well and refrigerated.)
  3. Top pasta with homemade walnut pesto, to taste. Enjoy!
